I used to like cupcakes.
The way they looked.
Their delicate features as I held them in my hand.
The way they felt when I took my first bite.
The fragrant flavors that burst from the cakes.
Now I like cookies.
I’m obsessed with them.
Especially those with a nutty, crunchy feel.
Today, I’d like to make a toast to all the cookies in the world.
Strawberry Thumprint Cookies
adapted from Oh She Glows
- 3/4 cup + 2/3 cup whole wheat pastry flour
- 1/2 cup walnuts, finely crushed or processed in food processor
- 1 tsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp sea salt
- 1/4 cup brown sugar
- 1 tsp pure vanilla extract
- 2 tbsp coconut oil, melted
- Add soymilk as needed
- Approx 1/3 cup strawberry jam
I’m not going to be a cookie hater but this recipe wasn’t our favorite. My sister and I thought the cookies tasted too doughy, even when we tried baking the second batch for a longer time to make them crunchier. Angela did warn that whole wheat flour wasn’t the best choice, but we thought we might be able to beat the odds after having tweaked the recipe a bit.
Our next mission? To come up with the perfect cookie recipe. And by “perfect,” we mean perfection to our palates and those who enjoy our treats!
