While I grilled my brains out trying to think of something spectacular to “wow!” my fellow foodies, it suddenly hit me that what I had made for my lunch was definitely a “First” creation in itself.
The luscious smoothie above is not my First. If you knew my eating habits so well, you would know that smoothies and I are best friends. I’ve attached myself to it more than it did to me. If I could eat these every day, every meal, I probably would.
But I can already hear my mother reprimanding me for not eating a balanced meal.
For those who are interested and will not tattle on me, here are the details to my concoction:
Ice Cream Smoothie
1.5 frozen bananas (I used plantains)
3/4 c frozen blueberries
1/4 c soymilk
Directions: Blend into blender until desired consistency
I apologize for deviating from my original assignment. Here is my actual “First”:
Black Bean Burgers
adapted from Mama Pea
- 1 can black beans, drained and rinsed cup mixed beans
- 1/3 c. red onion, minced
- 1/2 broccoli
- 1 carrot
- 1 celery
- batch of cilantro
- 1/2 c. mushrooms, chopped
- 1/2 c. oat (bran), ground to a coarse texture
- 1/2 t. (sea) salt
- 2 t. cumin
- 1 T. vegan Worcestershire sauce
- 1 1/2 t. minced garlic 1 clove of garlic
- Drizzle of sesame oil
Mash the beans in a bowl until they form a nice chunky paste. I pulsed oats, wheat bran, and sea salt together until it became a coarse, but not quite powdery texture. Then, I drizzled a bit of sesame oil with the carrot, broccoli, celery, cilantro, and garlic and placed that into the blender to pulse until it forms chunky bits. Mix the beans, oat bran, and vegetables together until it becomes a nice chunky paste. Instead of frying them in a pan, I drizzled a bit of Artisana Coconut Oil onto a baking pan and baked them in our toaster oven for about 20 mins.
